Achilleas Zalidis is a PhD candidate at University of the Aegean and a member of the Consumer and Sensory Lab in Lemnos, Greece. He holds a MSc from Wageningen University & Research (WUR) in Food Science with a specialization in Product Design. Furthermore, he is a research associate at Aristotle University of Thessaloniki (AUTh) exploring innovative techniques (e.g. hyperspectral imaging, machine learning, AI, LC-QToF-MS) to detect food adulteration and ensure nutrient bioavailability. Over the past few years, he has been associated with various projects in the field of food authenticity, product development and sensory science. His experience from research institutions such as Wageningen Food Safety Research (WFSR) in the Netherlands and Unilever R&D in the UK facilitates his research of combining different methods to better understand, create and communicate novel food products. His research interests expand to the use of novel digital tools in the agri-food chain through Living Lab methodologies to support the European Green Deal strategy and he is involved in several European projects (Horizon Europe).
